Mark's Mom's Mac & Cheese
Makes One 8" Square Pyrex Dish
1 ounce butter
1 ounce flour
2-1/2 cups whole milk
1 lb sharp hard Vermont cheddar, grated
1/2 lb (dry) elbow macaroni, cooked al dente
2 T freshly grated Asiago
2 T freshly grated Parmigiano
1/4 cup fine bread crumbs
1. Preheat oven to 350F.
2. Make a roux with the butter and flour.
3. Stir in the milk.
4. Fold in the cheddar.
5. Place cooked macaroni in baking dish and pour cheese mixture over top.
6. Sprinkle with Asiago.
7. Bake for 40 minutes, until bubbling.
8. Top with Parmigiano and bread crumbs and cook for an additional 10 minutes, until crisped.
