Gazpacho Vinaigrette

Makes About 2 Cups

1 tomato, chopped
1/4 cucumber, peeled and sliced
1/2 red bell pepper, seeded and chopped
1/2 cup best-quality olive oil
1/4 cup best-quality red wine vinegar
Salt to taste


1. Puree tomato, cucumber, bell pepper, and garlic in a blender until smooth.

2. Slowly drizzle in olive oil while blender is running.

3. Add red wine vinegar and pinches of salt in increments, tasting, until you achieve your preferred seasoning.

4. Store in refrigerator.
