Fresh Fruit Salad with Summer Herbs & Goat Cheese
Makes 2 Servings
Note: Tarbell’s recommends using organic products for this salad.
1 peach sliced into wedges
3 cups spring mix lettuce
1 sprig each fresh basil, mint, and tarragon, torn into pieces
6 to 8 sprigs fresh chives, cut into 1/4” pieces
1/4 cup arugula
3 ounces sweet vinegar (such as white balsamic or champagne)
5 ounces olive oil
2 ounces goat cheese
1 ounce dried cherries or apricots
1 ounce toasted pecans or walnuts*
Salt and freshly ground pepper to taste
1. Toss together first 7 ingredients (peach through olive oil)
2. Season to taste with salt and pepper.
3. Garnish salad with goat cheese, dried fruit, and nuts.
*To toast nuts: Heat a dry skillet over moderate heat. Add nuts and stir frequently until lightly browned. Be careful not to burn or the nuts will taste bitter.
