A Wedge of Iceberg with Cool Bleu Dressing
Makes 1 Serving
 
1 head of lettuce
1/3 pound bleu cheese
juice of 2-3 lemons
1-3 garlic cloves to taste
sea salt to taste
½ cup nonfat mayonnaise or homemade aioli
1 splash Worcestershire sauce
2 teaspoons extra virgin olive oil
¼ cup finely grated Parmesan or Romano cheese
1 splash soy sauce (low sodium)
1 teaspoon Dijon mustard
 
1.  Whisk all ingredients except oil and cheese until smooth.
2.  Slowly add the rest of the ingredients to the mixture.
3.  On a dark plate make a pool of dressing.
4.  Cut head of lettuce into quarters and place one quarter cut side up on plate.
