Tar’s Chocolate Mousse
6 generous servings

4 oz melted butter
4 oz highest quality chocolate
2 eggs
1/2 cup freshly whipped cream
1/2 cup sugar
1/2 T espresso powder
1/4 cup water
Additional freshly whipped cream (unsweetened) for garnish
Shaved chocolate for garnish
 
1. Melt chocolate and butter in double boiler.
2. Make a simple syrup of the sugar, espresso powder, and water.
3. Remove the top pan of the double boiler and let chocolate cool slightly.
4. Add the whole eggs to the chocolate, one at a time, mixing well.
5. Fold whipped cream into chocolate.
6. Pour into serving glasses or bowls and refrigerate for at least 1 hour.
7. Serve topped with unsweetened whipped cream and shaved chocolate.
