Tarbell’s Winter Coleslaw
6 Servings
3 large celery roots, cleaned and julienned 1 carrot, peeled and julienned 3 green onions, minced 3/4 cup capers 1 large bell pepper, seeded and minced 3 cloves garlic, minced 1-1/4 cup low fat mayonnaise (see instructions below) Fresh lemon juice to taste Salt and freshly ground pepper to taste
*You can also use julienned rutabaga and/or gold beets
