Tarbell’s Winter Coleslaw

 

6 Servings

 

 

3 large celery roots, cleaned and julienned

1 carrot, peeled and julienned

3 green onions, minced

3/4 cup capers

1 large bell pepper, seeded and minced

3 cloves garlic, minced

1-1/4 cup low fat mayonnaise  (see instructions below)

Fresh lemon juice to taste

Salt and freshly ground pepper to taste

 

  • Mix vegetables, capers, and garlic together.

  • Stir in mayonnaise and fresh lemon juice until you reach the desired consistency.  (Use more mayo for a creamier slaw).

  • Season to taste with salt and pepper.

  •  Let sit 30 minutes before serving.

 

 

*You can also use julienned rutabaga and/or gold beets
