Smoked Rock Shrimp with Plum Tomato Relish

~ Serves 6 ~

1 ¼ lb. smoked rock shrimp

 

Relish

3 plum tomatoes, diced

1 small white onion, chopped

¼ bunch cilantro, roughly chopped

1 T. tomato paste

1-2 Serrano chilies, diced ~ or ~   2-3 shakes Tabasco

Kosher salt, to taste

juice of two limes

 

 

  • Mix all the relish ingredients together.

  • Make a ring of the plum tomato relish, then top with the smoked rock shrimp.
