Tarbell's Plum Tomato Relish

 

4 Roma tomatoes

Half of a white onion

1/4 c. tomato paste

1/4 c. white wine vinegar

1 T. sugar

1/2 bunch cilantro

1 small serrano chile

Kosher salt to taste

 

  • Remove core form tomatoes and dice into small squares.

  • Dice the onion.

  • Chop the cilantro by hand or in a Cuisinart until fine.

  • Cut top off chile. Slice in half, remove the pith and the seeds. Chop into a fine dice...wash your hands!

  • In a medium size bowl, mix the tomato paste, white wine vinegar and sugar. Add the rest of the ingredients and stir.

  • Season with salt to taste.

  • If you cover and leave refrigerated for 4-6 hours, the flavors will blend together. If needed, you may serve immediately.
