Tarbell's Plum Tomato Relish
4 Roma
tomatoes
Half of a
white onion
1/4 c.
tomato paste
1/4 c.
white wine vinegar
1 T.
sugar
1/2 bunch
cilantro
1 small
serrano chile
Kosher
salt to taste

Remove core form
tomatoes and dice into small squares.

Dice the onion.

Chop the cilantro by
hand or in a Cuisinart until fine.

Cut top off chile.
Slice in half, remove the pith and the seeds. Chop into a fine dice...wash
your hands!

In a medium size
bowl, mix the tomato paste, white wine vinegar and sugar. Add the rest of the
ingredients and stir.

Season with salt to
taste.

If you cover and
leave refrigerated for 4-6 hours, the flavors will blend together. If needed,
you may serve immediately.
