Tarbell's  Hawaiian Estate Vintage Chocolate Mousse

 

~ Twelve Generous Servings ~

 

13 oz Hawaiian Estate Vintage chocolate, or best-quality semisweet chocolate

2 whole eggs

4 eggs, separated

16 oz whipping cream

powdered (confectioner's) sugar

 

  • Melt all the chocolate in a double boiler.

  • Whip the whipping cream with 2-3 Tbsp of powdered sugar

  • Beat the eggs whites with 2-3 Tbsp powdered sugar.

  • Remove the top pan of the double boiler and let chocolate cool slightly.

  • Add the whole eggs to the chocolate, one at a time, and mix well.

  • Add egg yolks one at a time,  mixing well.

  • Alternately fold whipping cream and egg whites into the chocolate.

  • Pour chocolate mixture into serving glasses or bowls and refrigerate.

 

~ Top with freshly whipped cream before serving ~
