Mark’s Mom’s Mac & Cheese

 

 

Serves 4-6

 

2 T butter

4 T flour

3/4 cup milk

1-1/4 pounds of extra sharp white Cheddar cheese, grated

2 teaspoons yellow mustard

Kosher salt to taste

Freshly ground black pepper to taste

2 pounds of cooked macaroni, cooled

 

  • Preheat oven to 4000.Melt butter in medium saucepan.

  • Stir flour, then milk, into melted butter.  In increments, stir in cheddar cheese until fully melted.

  • Add mustard and season with salt and pepper to taste.

  • Stir in cooked macaroni. Transfer to oven-and-broiler-proof dish, or separate into oven-and-broiler-proof individual serving ramekins.

  • Cook at 4000 for about 20 minutes, until heated through.

 

Topping

 

5 T freshly grated Parmesan cheese

2-1/2 T bread crumbs

 

  • Combine ingredients.

  • Spread on top of Mac & Cheese and place under broiler until browned and crisp.
