Annie's Fettucine

 

Sauce

3 roasted red peppers

1/2 cup extra virgin olive oil

2-4 cloves of garlic, minced

2 Tablespoons red wine vinegar

Salt to taste

Fresh basil leaves for garnish

 

  • Place all ingredients in blender.

  • Puree until smooth.

  • Set aside.

 

Pasta

1/4 cup Fava beans, blanched

1/2 cup French beans, blanched

1/4 cup fresh basil leaves

1/2 cup shaved sweet corn

1 small box fettucine

 

  • Cook pasta until al dente

  • Sauté beans and corn in a pan with one tablespoon olive oil, until warm

  • Add fettucine.

 

To Serve

 

  • Place room temperature sauce in a bowl.

  • Top with pasta mixture.

  • Sprinkle with basil leaves.
