Coffee Coconut Panna Cotta

 

1/2 ounce unflavored gelatin

1/4 cup brandy

2 cups milk

1 cup coconut milk

1 cup cream

1-1/2 tsp lemon zest, finely chopped

1/2 cup sugar

2 T finely ground espresso coffee

  • Lightly grease small molds with Canola oil spray.
     

  • Pour brandy into medium saucepan. 
     

  • Sprinkle gelatin over top.
     

  • Allow to sit for about 5 minutes, until gelatin has clumped and absorbed all liquid.
     

  • Mix milk, cream, coconut milk coffee and lemon zest.
     

  • Stir 1 cup of mixture into saucepan.
     

  • Bring to a simmer over medium heat, stirring constantly.
     

  • Add remaining 2 cups of the milk mixture and remove from heat.
     

  • Pour into prepared molds and chill for 3 hours.
