Spring Chicken with Tomato & Orzo

 

~ Four Servings ~

 

NOTE:  This recipe requires broiler-proof serving plates so that you can finish the plated dish in the oven.

 

4 6-8 ounce boneless, skinless chicken breasts

1 box orzo pasta  (we recommend DeCecco brand)

1 bunch clean, fresh spinach

1 bunch asparagus

8 ounce ball of fresh mozzarella cut into strips

¾ cup marinara sauce

 

  • Cut tips from asparagus and steam tips until crisp-tender.

  • Sear chicken breasts in 1T olive oil in a sauté pan,  then roast for 10-15 minutes at 350 degrees until meat is no longer pink

  • Put pasta in boiling water for 4-6 minutes.

  • Toss marinara sauce with cooked orzo.

  • Make a ring of orzo on the serving plates, and place uncooked spinach in the center.

  • Slice chicken breasts and arrange on top of spinach.

  • Lay asparagus tips and mozzarella decoratively on the orzo.

  • Heat the broiler in your oven and place the plate under the broiler for one minute.
