Basil Pesto

Makes 2 Cups

1 cup basil, packed
1/2 clove garlic
1/8 cup pine nuts, toasted*
11/8 cup freshly grated Romano cheese
Salt and pepper to taste
Olive oil as needed

  • Place basil, garlic, pine nuts, cheese, and about 1/2 cup of olive oil in blender or food processor.
  • Pulse until well blended, adding more oil as necessary, until you have about 2 cups.
  • Season with salt and pepper.

*To toast pine nuts, place in a dry, clean skillet over low heat.  Watch carefully, shaking pan frequently, until golden but not browned.
