Asparagus ~ French & Tuscan Style

3 bunches asparagus: peeled and steamed 7-10 minutes

French Dijon Mustard vinaigrette

2/3 c. canola oil

1/3 c. white wine vinegar

1-2 T. Dijon mustard

pinch Diamond Crystal Kosher salt

1 T. chopped shallot

 

Tuscan Vinaigrette

2/3 c. extra virgin olive oil

1/3 c. fresh squeezed lemon

1-2 pinches Kosher salt

 

Combine the respective ingredients and pour over asparagus.
