Summer Salad of Peaches, Watermelon, Herbs & Goat Cheese

 

~ Four Servings ~

 

 

3 fresh peaches, sliced into 6th’s  (do not peel)

3 oven dried peaches, cut into julienne *

1 sweet onion, such as Grand Canyon or Vidalia, halved and cut into julienne

3 ounces goat cheese

12 melon-ball scoops of watermelon

One-half ounce of Muscat vinegar

Olive Oil

4 handfuls of field green lettuces

 

  • Mix all ingredients except olive oil.

  • Add enough olive oil to coat, and mix well

  • Season to taste with salt and freshly cracked black pepper
