Campfire Tacos

with Toasted Cumin & Cilantro

 

Serves 6

 

1 lb ground sirloin

1 white onion, finely chopped

3 T olive oil

2 T toasted ground cumin (see toasting directions in Step 1)

2 each finely minced Serrano chilis

1 T black pepper

1 T Kosher salt

1 T ancho chili powder

2 T fresh lime juice

1 bunch cilantro, picked through and cleaned

6 – 8 flour tortillas

 

Optional:       

1 tomato, seeded and chopped

Pinch salt

1 T fresh lime juice

One half pound grated Jack cheese

 

  • Heat dry pan over medium heat.  Add cumin and stir five minutes to toast.

  • Add olive oil.

  • Add onions and stir over medium heat until translucent.

  • Add chili powder, salt, and sirloin and stir until the meat is cooked (approximately 20 minutes).

  • Add pepper and check for seasoning.

  • Finish with cilantro and spoon into tortillas.

  • If using optional ingredients, mix tomato, salt and lime juice and spoon over tacos.

  • Sprinkle with cheese.
