Campfire Tacos with Toasted Cumin & Cilantro
Serves 6
1 lb ground sirloin 1 white onion, finely chopped 3 T olive oil 2 T toasted ground cumin (see toasting directions in Step 1) 2 each finely minced Serrano chilis 1 T black pepper 1 T Kosher salt 1 T ancho chili powder 2 T fresh lime juice 1 bunch cilantro, picked through and cleaned 6 – 8 flour tortillas
Optional: 1 tomato, seeded and chopped Pinch salt 1 T fresh lime juice One half pound grated Jack cheese
Sprinkle with cheese.
