Angel Hair Pasta with Tomato, Parmesan & Chicken Tenders

 

~ 2 Servings ~

 

One half box angel hair pasta

6 ounces chicken tenders

1 ripe tomato

One quarter cup freshly grated Parmesan cheese

4T extra-virgin olive oil

4-5 leaves fresh basil

1 ounce smoked Mozzarella cheese (optional), cut into small cubes

2 T chopped shallots 

One eighth cup half & half

salt and freshly ground pepper to taste

 

  • Bring large pot of water to a rolling boil and cook pasta until al dente, (3-6 minutes).  Strain water, sprinkle past with olive oil, and set aside.

 

  • Heat a heavy-bottomed sauté pan over medium heat for 3 minutes.

 

  • Add the olive oil and shallots and cook for 30 seconds.

 

  • Add chicken, then tomato, then half & half.  Simmer and stir for 5 minutes.

 

  • Remove from heat, add cooked pasta, and stir together.

 

  • Sprinkle generously with Parmesan cheese (and Mozzarella if you’re using it) and garnish with basil.
